Lemon PICKLE

Indian dish always comprised of various pickle. This is one version of sweet,tangy and spicy lemon pickle

Ingredients:

  • 4 to 5 lemons
  • 2 tbsp rock salt
  • 50 gm Jagery
  • ¼ tsp turmeric
  • ½ tsp chilli powder
  • ½ tsp broken fenugreek seeds
  • ½ tbsp oil

Recipe:

  • Method 1:
  • Cut lemon in the quarter or little smaller if desire.
  • Remove all seeds
  • Once all lemons are chopped, add salt and turmeric and mix all ingredients well.
  • Fill these marinated lemon pieces, fill them in clean dry air tight jar for 6 to 7 weeks.
  • Make sure to stire these lemons every week or so.
  • Once lemons skins are soft (one way to check is priking spoon through the skin) add Jagery, chilli powder, broken fenugreek seeds and oil.
  • Pickle will be ready to enjoy in 2 to 3 days.
  • Method 2:
  • Steam whole lemons for 10 to 15 minutes or boil them for 10 minutes.
  • Once cooled, cut them in the quarter or little samller as desired.
  • Remove all seeds.
  • Once all lemons are chopped, add salt, turmeric, Jagery, chilli powder, broken fenugreek seeds and oil.
  • Pickle will be ready to enjoy in 2 to 3 days.
