You can choose a topping such as fried onion, spring onion or fried bacon pieces. Just experiment as you feel!
Ingredients:
- 100 gm Pasta
- 400 ml water
- 1/4 cup of chopped carrot and broccoli
- 1/4 cup frozen peas and sweetcorn
- 1/2 tsp salt
- 1/2 cup Milk
- 15 gm butter
- 1 tbsp plain flour
- 1 tsp herb mix
- 1/4 stock cube
- 50 gm cheese for sauce
- 25 gm cheese to sprinkle on the top
Recipe:
- Take pasta in a saucepan,. Add boiling water and salt and boil them according to package instructions for 10 – 15 min. After 7-8 min you can add chopped carrot and broccoli. Just when you are about to turn the heat off, add frozen peas and sweetcorn as they don’t need much cooking.
- In another saucepan, take butter and flour. Roast the flour on very low heat till the flour becomes light brown and releases the aroma of nuttiness. This process will take about 5 min.
- Once the flour is cooked, add mixed herbs and give the flour a quick stir. Now add 1/2 milk but quickly stir the flour and milk well with the whisker to avoid forming any lumps. Now add the rest of the milk and whisk again. Now add a stock cube or paste. Whisk the sauce again. Now add black pepper and cheese to the sauce. If the sauce is quite thick, add some more milk to make the desired consistency. This process will take another 5 or so.
- Now add drained pasta and vegetables to the sauce and mix well. If you are making this dish for later in the day, make the sauce more runny as pasta will absorb the liquid.
- Now in a casserole or oven-proof dish, pour all the saucy pasta and roughly level it. Now sprinkle with the cheddar cheese and cook the dish in the oven for 10- 15 min on 180.
- Serve with garlic bread and enjoy while it’s still quite hot!
